Flourless Chocolate Ganache Cake

Looking for a decedent dessert to serve up this Valentine’s Day… or any day for that matter? This naturally gluten free flourless chocolate cake with it’s simple and (almost guilt-free) ingredients, rich ganache frosting and brownie-like texture, is sure to hit the spot

We love baking with Aurora and took every opportunity to do some “homeschooling” lessons along the way. We chatted about washing hands, knife safety (see photo below of Aurora using her very adult-looking but very child-safe knives), the different ingredients, why would anyone like a flourless cake, measuring and so much more along the way! And as Aurora noted, “The chef always gets to taste the cake!” And who can argue with that?

INGREDIENTS

  • 1C unsalted butter, cubed

  • 6oz dark chocolate finely chopped

  • 3/4c granulated sugar

  • 3 large eggs

  • 1 large egg yolk

  • 1tsp vanilla

  • 1/4tsp salt

  • 1tsp instant espresso

  • 1/3c cocoa powder

Ganache Frosting

  • 6oz dark chocolate

  • 1/3c heavy cream

INSTRUCTIONS

  • Preheat oven to 375F.

  • Line the bottom of an 8" round cake pan w/ parchment paper and grease the sides.

  • Add butter and chopped chocolate to microwave or melt on stovetop. Remove from heat and allow to cool slightly and add sugar.

  • In a separate bowl whisk the 3 eggs, the yolk and then add vanilla and egg to the chocolate mixture.

  • Add cocoa, espresso, and salt to the chocolate - UNTIL JUST COMBINED!

  • Pour into pan. Place in middle of oven. Bake 24-28 minutes or until top is set.

  • A toothpick should come out relatively clean but a few crumbs are ok. Remove from oven and run a knife around edges while still warm to help with removal.

Ganache

  • Fine chop chocolate - put in bowl.

  • Heat cream - on stove or in microwave.

  • Pour cream over chocolate. Let sit 3-5 mins & then stir.

Drench that Cake in Chocolate Love!

  • Remove cake from pan once fully cooled. Place on a serving plate.

  • Pour ganache over & spread with a flat knife.
